These treats are the best! And they will hopefully be your go-to, gluten-free peanut butter ball to dip in chocolate for the holidays or any other celebration. Easter maybe? Or a St. Patty’s Day chocolate covered green ball? The possibilities are endless…
Sometimes eating peanut butter is one of the biggest pick-me-ups for protein. There are times when you really just need it. Other times when you just simply crave it. And naturally, peanut butter is gluten-free.
If you go to the grocery store, you’ll find lots of different brands of peanut butter that are labeled gluten-free. The best gluten-free labels to look for are marked certified.
Gluten-Free Peanut Butter Brands:
Use an extra chunky peanut butter here. It’s really what you need to make these gluten-free peanut butter balls complete. Trust me.
My husband and son would want a peanut butter ball that has Jiffy’s name written all over it. Jiffy is gluten-free! They have an extra chunky version and you’ll need an extra chunky peanut butter for this recipe.
I believe Skippy is also gluten-free. My daughter’s favorite brand? Uh, none. She wouldn’t browse a store peanut butter isle if her life depended on it. Her gag reflex picks up when she approaches peanut butter. She despises peanut butter. Enough said.
Now, I could eat just about any brand of peanut butter that is gluten-free, but I prefer natural. You can find gluten-free natural peanut butter with peanut chunks in grocery stores. The brands I mentioned above carry them.
Of course, you can also just make your own peanut butter. But who has time for that?
I’m kidding! You can make your own peanut butter with your eyes closed. Seriously! Same with almond butter! All you need is a mini food processor and some peanuts. A mini food processor is a necessity when it comes to gluten-free cooking.
Make Your Own Peanut Butter:
- Grind and chop up those peanuts, throw in a dash of sweetener like honey, and sprinkle in some kosher salt.
- Then hand chop some more peanuts and throw them in after your mixture is smooth, to make it extra chunky. Done!
If you go and buy sweets and snacks and holiday goodies that contain peanut butter, chances are they’ll contain gluten as well. A few big brand named goodies might not be, but for the most part, you’ll have gluten on your hands. So, what’s a sans gluten peeps to do?
You make your own. This recipe is pretty much the easiest of its kind you’ll find online. It’s much less complicated than any other! By far.
You can eat these as is, or coat them in dark chocolate and make these your holiday go to bites. They’re gluten-free and so easy to make, with only three ingredients!
This filling is so easy, I felt guilty writing a recipe for it. Because it’s so easy. And SO good.
How Do you Make These Gluten-Free Coconut Covered Peanut Butter Balls?
There are three ingredients. Not seven or eight. No butter. No oats. No syrup.
- It’s simply extra crunchy peanut butter,
- confectioners sugar,
- and coconut shavings.
And that is it.
Combine them all and you’ve got yourself a creamy, delectable treat. It’s so smooth, yet crunchy at the same time.
Now why add confectioners sugar? Because it’s awesome. And sweet. And yes, it’s sugar. And this is a gluten-free blog. I’m not a sugar free blogger.
BUT you can totally make these with something sugar free! Or coconut flour! But it will taste different. And I LOVE the taste of these best.
And don’t get me started on those coconut shavings. They’re one of my favorite things ever. I love chewing on them! I make a gluten-free chocolate no bake fudge that uses coconut shavings. I had it up on the old blog before it was hacked 😩🥺🤬, but I plan on getting it up soon on Feeding Gluten Free.

Gluten-Free Coconut Coated Peanut Butter Balls
- 1/3 cup Extra crunch gluten-free peanut butter
- 4 tablespoons Confectioners sugar
- coconut shavings unsweetened (sweetened sometimes has cross-contamination)
- Add confectioners sugar to peanut butter 1 tablespoon at a time.
- Each time you add a tablespoon, stir mixture with a fork until blended.
- Mixture will toughen in the end, but fingers should not stick to it.
- Tear off chunks so that you have about 8 separate pieces. With the palms of your hands, roll each piece into 1 to 1 1/2 inch balls.
- On a big square of parchment paper, gently place each piece.
- Once finished, place coconut shavings in a regular sized bowl.
- Take one peanut butter ball piece at a time, and roll in the coconut.
- When shavings evenly coat the ball, roll it in the palm of your hands again.
- You can press the shavings in a bit. Just roll in hands again to form a perfect ball.
- Place pieces back on parchment paper to settle for about 10 to 15 minutes.
- Leave out to eat, serve on a cute dish, or refrigerate them to coat later with chocolate!
- Note: To store these, use an airtight container and store on the counter.
