Cereal Bars Recipe (Gluten-Free/Dairy-Free)
A perfect marshmallowy treat for any child with a wheat and dairy allergy!
Servings 12 squares
- 5 tablespoons buttery spread I used Earth Balance Original buttery spread
- 5 cups mini marshmallows Dandies are labeled gluten & dairy-free
- 5 cups cinnamon cereal Van's Cinnamon Heaven is labeled gf& df
- pinch of kosher salt
In a large bowl, melt butter in microwave for about one minute.
Add 3/4 marshmallows to melted butter, and set aside the last 1/3 of marshmallows.
Stir in marshmallows with a spatula, then pop back in microwave for 30 seconds.
Stir again, then microwave another 30 seconds.
Stir, then another 30 seconds in microwave.
Add cereal to melted mixture and stir.
Then add remaining marshmallows to mixture.
Stir everything thoroughly, then microwave for 30 more seconds.
Stir one last time then pour mixture into a bread pan lined with parchment paper.
Push down mixture and spread evenly throughout the bread pan with a spatula.
Let sit for awhile to settle, then cut squares and serve!
