Cereal Bars Recipe (Gluten-Free/Dairy-Free)

A perfect marshmallowy treat for any child with a wheat and dairy allergy!

Ingredients

  • 5 tablespoons buttery spread I used Earth Balance Original buttery spread
  • 5 cups mini marshmallows Dandies are labeled gluten & dairy-free
  • 5 cups cinnamon cereal Van's Cinnamon Heaven is labeled gf& df
  • pinch of kosher salt

Instructions

  • In a large bowl, melt butter in microwave for about one minute.
  • Add 3/4 marshmallows to melted butter, and set aside the last 1/3 of marshmallows.
  • Stir in marshmallows with a spatula, then pop back in microwave for 30 seconds.
  • Stir again, then microwave another 30 seconds.
  • Stir, then another 30 seconds in microwave.
  • Add cereal to melted mixture and stir.
  • Then add remaining marshmallows to mixture.
  • Stir everything thoroughly, then microwave for 30 more seconds.
  • Stir one last time then pour mixture into a bread pan lined with parchment paper.
  • Push down mixture and spread evenly throughout the bread pan with a spatula.
  • Let sit for awhile to settle, then cut squares and serve!
