Best Egg Salad Sandwich {Gluten-Free}

A fantastic egg salad sandwich that uses horseradish mustard.

Ingredients

  • 2 hardboiled eggs chopped
  • 1 avocado chopped (you can use the whole avocado or half)
  • 1 tablespoon horseradish mustard or more, if preferred
  • baby kale leaves
  • kosher salt to taste
  • ground black peppercorn to taste
  • gluten-free bread or crackers Udi's or Crunchmaster are gluten-free

Instructions

  • In a bowl, combine chopped eggs, avocado, kosher salt and pepper then gently mix thoroughly with a spoon.
  • On gluten free bread or crackers, spread horseradish mustard, top with baby kale, then top with egg mixture.
  • You can serve these as appetizers on crackers or make a sandwich with them.
  • You can add the horseradish to the egg mixture then stir, if preferred.
